How to Candy your own pecans…..
There are several ways to get the sweet pecans that are so good in our Crystals Salad, but this is how we do ours--- unfortunately, we don’t measure because we do such large amounts at once, but you can do yours in a small batch or a large batch if you follow this process.
Preheat your oven to 250 degrees
First, you’ll need a “binder”; something that makes the sugar stick to the nuts. We use egg whites. Place your pecans in a bowl and stir in egg whites until the nuts are just moist, not swimming in liquid.
Next, liberally sprinkle brown sugar on nuts while stirring them. Keep going until they are all coated.
Spray a sheet pan with non-stick cooking spray and pour the nut mixture onto the pan.
Spread them out so they are not laying on top of each other.
Put them in oven to “bake” on that low 250 degree temp. About every 15 minutes, use a spoon or spatula to gently stir the pecans to help keep them from sticking and to expose other surfaces to the oven heat so that they may “dry out”…..usually this takes about 45 minutes.
The nuts are done once you can see no more wet-like spots on them. Take them out of oven to cool…make sure you make extra because you will eat half of them while their still warm from oven!
On a side note- you can use the egg white binder to adhere and bake on all types of flavor combinations to nuts. Some things we’ve done before- Garlic Parmesan, Brown Sugar Cayenne, Lemon/Worchestshire, and more--- so be brave and use this process to do your customized snack mixes and salad combinations!
